Wild Rocket serves what Will and his friends like to eat and drink - simple unfussy modern comfort food with easy drinking wines; lazy Sunday brunches with lots of martinis and mojitos. Will believes in basic, fuss-free cooking – letting the fresh ingredients speak for themselves - “I believe there is a time and place for food with a recipe that reads like a novel complete with fancy sauces - but you can’t eat that on a daily basis. What I love to eat all the time is simple good food with the best ingredients possible. For example, fish – the less you do to a fish the better it tastes - It doesn’t take much to sear some fresh dory fillet in spluttering butter with a sprinkle of parsley, a crack of black pepper and a squeeze of lemon; but it is one of the best things to eat.” An advantage of being a self-taught chef is that Will has no culinary baggage that a classically trained chef might have. That notwithstanding, Will tries not to label his food as fusion food as he thinks that the phrase has been abused and overdone for gimmick’s sake. He says “There is fusion food and there is confusion food. Proper fusion food should not have conflicting tastes; instead it should be so good that no one thinks of it as fusion rather they would just say that is a clever way to cook a particular dish.” Using fresh ingredients also means that Will uses local herbs and spices wherever possible. In fact, the rooftop garden is home to Will’s joy and pride – his own supply of sweet basil, laksa leaves, mint leaves and chilli plants. There is nothing like freshly squeezed orange juice to start a lazy Sunday brunch, followed by scrambled eggs on toast with grilled fresh sausages and ending with a cosmopolitan martini or a glass of bubbly champagne. There is a wide selection of drinks ranging from Italian premium coffee, iced lemongrass tea, white Belgian beers to new world easy drinking wines and trendy cocktails. Be sure not to miss the refreshing mojitos prepared with fresh mint leaves plucked from the rooftop garden!
